

Our whisky is made on site. It is a true single malt whisky, distilled in a 600-litre copper pot still, using Australian malted barley as the single grain ingredient. Our inspirations are the great single malts of Scotland and the Isles. We have been following the same time-honoured traditions, producing in small batches since 2007. In the local area, whisky has been distilled since the 1800’s, the illicit distilling past is fascinating, but that is a story you will have to visit us to hear!
Our old railway shed produces premium single malt in a geographical location with seasons that are ideal for making and aging whisky. Our still produces a sweet and balanced new make that we age predominantly in small, heavily charred, ex port casks or either American or French oak.
We also produce a range of spirits including: Snake Track Vanilla Vodka, Jim Love’s Strawberry Schnapps, Limoncello and our famous Baxter’s Coffee Cream liqueur. All available for tasting every day.
Our location is a destination in itself. Across the creek is the home of Timboon Fine Ice Cream, next door there is a kid’s playground and skate park and of course we are located at the start of the Crater to Coast Rail Trail with bike hire next door available too!
We are located just a short drive from the 12 Apostles and are part of the 12 Apostles Food Artisan trail which is worth a days drive in itself!
Whisky Food Beef
We offer great regional food fare every day. Led by our head chef Simon Yarham, our kitchen team creates a different focus for each season. Designed for sharing, you can find our current menu on our website. www.timboondistillery.com.au Lunch is served on the deck, heated in Winter and cooled in Summer.
As well as whisky, the Walker family also raises ABeckett’s Creek, black angus, grass fed beef on rolling green pastures, five minutes from the distillery. The beef is processed locally and is available in fresh and frozen take home packs.
