Our whisky is made on site. It is a true, small batch, single malt whisky distilled in copper pot stills using Australian malted barley. Distiller and owner Josh Walker draws on inspiration from the great single malts of Scotland and the Isles. We have been following these traditions on site since 2007.
Our single malts are a premium craft product, aged in heavily charred, American or French oak barrels, predominantly ex port casks. With a local, colourful illicit distilling history in the past, the old railway shed is a true ‘sense of place’ destination. We produce a range of single malt whiskies; a vanilla vodka, strawberry schnapps, limoncello and coffee cream liqueur.
The Distillery offers visitors the unique experience of witnessing a boutique whisky distilling process and tasting our award-winning range, perhaps whilst enjoying lunch on our deck.
You can discover the history of local distilling in the area while appreciating the renovated railway goods shed built in the early 1900’s, in which the distillery now resides, right on the rail trail.
